The only work I know of that actually uses a dog is Walter Piston’s “The Incredible Flutist”. The Seattle Symphony recording uses a real dog named Nori.

I remember Peter Schickele (in a concert, not on a recording) giving a long list of dog-related musician name gags, including Buffy Saint-Bernard and Dietrich Fischer-Bauwau.
